  • 1 tbsp vanilla extract

  • 1 tsp baking powder

  • Pinch of salt

  • 1/2 cup heavy cream (for the brûlée topping)

  • 1 tbsp coconut sugar (for the caramelized topping)

  • Fresh berries for garnish (optional)


Instructions:

  1. Preheat the Oven
    Preheat to 350°F (175°C). Line a 9-inch cake pan with parchment and lightly grease.

  2. Mix the Wet Ingredients
    In a medium bowl, whisk eggs, applesauce, coconut milk, honey/maple syrup, and vanilla until smooth.

  3. Combine the Dry Ingredients
    In another bowl, stir together almond flour, coconut flour, baking powder, and salt.

  4. Mix it All Together
    Stir dry into wet. Batter will be thick—perfectly normal!

  5. Bake
    Pour into the pan, smooth the top, and bake for 25–30 minutes, or until a toothpick comes out clean.

  6. Make the Brûlée Topping
    Simmer the heavy cream in a small saucepan, remove from heat, stir in coconut sugar, and let cool slightly.

  7. Finish It Off
    Once cake is fully cooled, pour over the cream topping. Use a kitchen torch or broil for 1–2 minutes until caramelized.

  8. Serve & Enjoy
    Garnish with fresh berries or powdered monk fruit. Slice and enjoy your creamy, dreamy dessert!
