Mediterranean Breakfast Omelette

This Mediterranean-inspired omelette is quick to make, full of flavor, and loaded with ingredients that support energy, focus, and digestion — perfect for busy mornings or slow weekends.
Ingredients:

2 eggs (or 1 whole egg + 2 egg whites)

½ cup fresh spinach, chopped

½ tomato, diced

1 garlic clove, minced

1–2 tbsp feta cheese, crumbled

Olive oil or avocado oil for cooking

Sea salt & pepper to taste
Instructions:

Heat a small non-stick pan over medium heat with a drizzle of oil.

Sauté garlic for 30 seconds, then add tomatoes and spinach. Cook until spinach wilts.

In a bowl, whisk your eggs with salt and pepper. Pour over the veggie mixture.

Let cook for 2–3 minutes on low until set.

Sprinkle feta on top. Fold in half and serve warm.
